Leftover Roast Lamb Sandwich

A simple but tasty Leftover Roast Lamb Sandwich highlights slices of roasted lamb, mint pesto and an arugula salad on whole wheat French bread. A perfect way to use up leftover roast lamb.

  • 1/2 loaf whole wheat French bread
  • 3 tbsp mint pesto
  • 8 ounce lamb roast sliced
  • 2 ounces arugula and spinach tossed in red wine vinegar and olive oil


  1. Cut loaf in half and slice bread in half, creating 2 sandwiches. Spread pesto onto both sides of bread.
  2. Toss greens in red wine vinegar and olive oil. Season with salt and pepper. Place onto on side of the sandwich.
  3. Place sliced lamb roast on to other side of sandwich. Bring sides together to create a sandwich. Pick down with sandwich skewers. Enjoy.
