Roasted Chicken Wings with Sweet Pepper Sauce

Ingredients

Brine

  • 1 cup orange juice
  • 1 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/8 teaspoon red pepper flake
  • 1 teaspoon black pepper corns
  • 1 bay leaf
  • 1 cup ice
  • 1 lb chicken wings
  • 1 ½ tablespoon corn starch

Sauce

  • 3 bell peppers cored and large chopped
  • 2 jalapenos corned and large chopped
  • 2 cups orange juice
  • 1 orange zested
  • 2 tablespoons sugar
  • 1 cup butter cut into cubes.

Instructions

Brine

  1. In a small sauce pot, bring brine ingredients (minus the ice) to a boil. Turn off heat and let it cool down for 30 minutes, add ice cubes.
  2. In a baggy with the chicken wings, add brine and close shut. Allow to brine over night.
  3. Drain chicken wings from brine and pat dry with paper towels. Place in a plastic bag and add cornstarch. Shake until generously coated. Shake off excess cornstarch before adding to rotisserie.
  4. Secure the tumbler attachment in the rotisserie oven and place wings in drum. Close, add water to the bottom drip pan and set oven to 525 for 45 minutes. Reduce heat to 475 and cook for another 20 minutes.

Sauce

  1. Bring all sauce ingredients to a boil in a medium sized pan and reduce liquid by 1/2 . Once liquid has been reduced and peppers are soft, blend sauce with a stand blender or immersion blender.
  2. In a small pot, warm up ¼ cup water over medium heat. Add a few cubes of butter and whisk until incorporated. Continue to add butter, fully incorporating each addition before adding more butter. Repeat this process until all butter has been added.
  3. In a small bowl, mix together equal parts butter and sweet pepper sauce. Toss in cooked chicken wings and coat evenly. Garnish with jalapeno slices and oranges.

Recipe Notes

Note: if you like crispy wings, take the sauced wings and broil them in the oven for about 5 minutes.
