Heirloom Tomato, Watermelon and Feta Salad

  • ½ small watermelon medium diced
  • 3 each heirloom tomatoes medium diced
  • 2 ounces arugula
  • ¼ cup fresh basil
  • 2 ounces feta
  • 2 ounces pepitas toasted and seasoned


  • ¼ cup champagne vinegar
  • ½ tablespoon Dijon mustard
  • ½ tablespoon honey
  • ½ cup EVOO



  1. Whisk ingredients to vinaigrette together in a small bowl. Store in a small container until ready to use.


  1. Carefully mix together all ingredients in a medium bowl, making sure everything was evenly mixed. When ready to serve, dress salad with vinaigrette and enjoy.
