Ingredients

Baked Brie

  • 8 ounce brie wheel
  • 1 sheet puff pastry
  • 1 each Egg beaten

Jam

  • 4 ounces dried cherries
  • 7 ounces dried figs stemmed and halved
  • 2 each bay leaves
  • 1/2 cup balsamic vinegar
  • 1/2 cup water
  • 1/3 cup Sugar

Instructions

  1. Roll puff pastry until a square shape is achieved. Place wheel of brie in the middle and measure how much will need to be trimmed from puff pastry to fit. Cut excess pastry. You should have a small square.
  2. Preheat oven to 350 degrees. Brush the outside edges of the puff pastry with beaten egg and fold puff pastry over the brie, pressing edges together. Place wheel of brie into the fridge to rest for an hour so the puff pastry can firm up.

  3. Combine fig and cherry jam ingredients together in a medium sized sauce pot and bring to a boil. Reduce heat and simmer until dried fruit have become plump. Puree jam in a food processor or blender until no big chunks are left.

  4. Egg wash the outside of the wrapped brie and bake for 20 minutes.
  5. Top baked brie with jam and serve with pears, apples, and crackers.
